Ingredients for cooking borsch on pork ribs
- Pork ribs 200 grams
- Beets 2 pieces
- Pickled cucumbers 3 pieces
- Sauerkraut 1 handful
- 3-4 potatoes
- Beans 1 cup
- 2 carrots
- Parsley (root) 1 piece
- Onion 1 piece
- Garlic 1 clove
- Sliced dill 1 tablespoon
- Sour cream 18% 1/2 cup
- Allspice several grains
- Seasoning universal 1 tablespoon or to taste
- Tomato paste 1 tablespoon
- Bay leaf 2 pieces
- Salt to taste

Saucepan, spatula, kitchen knife, cutting board, grater.
Step 1: chop the vegetables.
Rinse the cabbage, dry and cut very thinly. Thinly chop pickled cucumbers and drain the brine from them.
Peel the carrots and parsley root, rinse and grate on a medium grater or cut into small cubes. Also finely chop the beets.
Rinse and soak the beans for one night.
Peel and finely chop the onion and garlic.
Step 2: fry the ribs.
Fry the ribs at the bottom of the pan to drain the fat from them. When the meat changes color, and its sides turn golden, add onions and garlic to the ribs, fry until transparent.
Step 3: Cook the soup.
Pour water into a saucepan, add beans and simmer over medium heat for 30 minutes. Add spices, pepper, allspice and salt.
After half an hour of cooking, add carrots, beets, parsley, cabbage and cucumbers, and a bay leaf to the soup. Keep cooking more 15 minutes.
Now the potato and tomato paste are sent to the soup. Continue cooking until the vegetables are tender.
When the meat, beans and vegetables are ready, check if there is enough salt in the soup, and add fresh herbs and sour cream to it (first mix it with a ladle of hot broth). Stir and then remove from heat.
Step 4: serve the borsch on the pork ribs.
Serve the borscht hot. It turns out to be rich, satisfying, and at the same time it is prepared relatively quickly and simply. My homework is delighted!
